Sommeliers/Wine waiters manage the wine service in hotels and restaurants. They have expertise in wine and other alcoholic beverages, such as cocktails, beers and spirits. They work in licensed premises, including:

  • restaurants and wine bars
  • country hotels and private clubs
  • overseas resorts
  • on board ships.

They are responsible for compiling the wine list in liaison with restaurant management and/or the head chef. They keep the wine cellar stocked and serve customers, often advising them on the best choice of wine for their meal, or suggesting a range of cocktails and aperitifs.

Sommeliers/Wine waiters may have to work long and irregular hours, including evenings and weekends. Restaurant and bar environments can be busy and demanding. Waiters spend a lot of time on their feet, speaking to customers and colleagues, or visiting the kitchens and the cellar.

Salaries range from around £12,000 to over £50,000 a year for a head sommelier.

Sommeliers/Wine waiters need to be:

  • communicative and sociable
  • passionate and knowledgeable about wine
  • able to work on their feet for long periods
  • professional and customer orientated
  • interested in the hospitality industry
  • interested in the wines of the world.

Sommeliers/Wine waiters work in a variety of different environments. They may work in restaurants, clubs, wine bars and hotels throughout the UK. It is a growing area of work.

Most entrants learn their trade on the job. They may apply for a Hospitality Apprenticeship, or start working as a waiter or member of bar staff and apply for junior wine waiter positions. Relevant qualifications include:

  • Wines and Spirit Education Trust (WSET) certificates
  • NVQs/SVQs in Food and Drink Service at Levels 1 and 2
  • The Academy of Food and Wine Service Craft Traineeships.

Most wine waiters aim to become head sommeliers in top establishments. They may become wine tasting experts and increase their prospects by taking further qualifications, such as those offered by the Court of Master Sommeliers or The Institute of Masters of Wine. There are good opportunities to work abroad.
